I thought it would be interesting to share a little bit about how we care for our “Simona”.
For those who don’t know, Simona is our Nuova Simonelli Aurelia II Volumetric espresso machine.
She makes amazing espresso all day long and every day. Like any great machine, it needs regular maintenance to ensure she keeps pulling great shots each and every time.
So, how do we accomplish this? Well maintenance should be part of your daily routine and it should not be ignored. Furthermore, you should feel comfortable asking your barista how often the machine is cleaned and what procedure is used etc.
Let’s be honest, most baristas like myself are a little… what’s the word I am looking for…. OCD.
Have you ever watched your barista? Like really watched…the movements between taking the portafilter out, grinding the coffee, leveling the coffee, cleaning the ears, purging the machine are pretty much robotic. Those same professional baristas also know that amazing espresso is the result of many factors. They also know that a dirty machine is never good for you the customer.
At Sabor Espresso its a daily procedure to clean the machine from top to bottom and inside and out. We use Cazifa for our cleaning product. We clean the group head at least once per day and more depending on the number of shots pulled. We also remove the shower screen and group head diffuser plate daily to ensure you are not drinking old dirty grinds in your espresso drink.
